The Signature Grand Cru reflects the true identity of the house. Its distinct aromatic structure combined with the minerality of a great terroir.
The nose combines aromas of stewed pears and vine peaches, with a touch of torrefaction and aniseed.
The effervescence is creamy and smooth to the palate. Red and yellow fruit aromas blend with a chalky minerality that brings up saline undertones.
Blend: 55% Chardonnay, 45% Pinot Noir
Multilayered due to lemons and limes with brioche, butter and a whiff of leaves. Light-bodied with fine bubbles and refreshing acidity. A bit more length expected.
Disgorged in January 2020 with 3.8 grams per liter dosage, the latest release of Soutiran's NV Brut Grand Cru Signature is based on the 2014 vintage with 66% reserve wines from 2013. Despite its recent disgorgement, it's already quite expressive, opening in the glass with notes of honeyed green orchard fruit, fresh bread and peaches. Medium to full-bodied, lively and vinous, it's more reserved on the palate, but it's beautifully balanced and displays promising depth at the core. With six months or more on cork, it should really start to sing.
Flavors of pastry dough, macerated raspberry and peach fruit, grilled nuts and crystallized honey ridea refined mousse. Minerally notes of wet chalk and oyster shell create a savory overtone that lingers on the finish. Enjoy this with food; try shellfish. Pinot Noir and Chardonnay.
