Over the years that Luís Seabra has worked in the Douro region, he has developed his knowledge of a group of old vineyards that have a very unique character, given by the place where they are planted and the grape varieties that make them up.
Made from two specific vineyard plots, this red Xisto Cru was vinified using low-intervention methods.
Fermentation with stems was carried out using indigenous yeasts, in open wooden vats, from old port wine barrels. It was aged in used French oak barrels.
The grapes come from two Cima Corgo vineyards, one in Covas do Douro and the other in Ervedosa do Douro, both over 80 years old; the first planted at an altitude of 400m, facing west, and the second planted at 570m, facing north. The predominant grape varieties are Rufete, Touriga Franca, Tinta Carvalha, Malvazia Preta, Alicante de Bouchet, and Donzelinho Red, among others.
The two vineyards were harvested separately, and the grapes were vinified in open vats made of old reclaimed Port wine wood, both with 60% of the stems. The total maceration was 29 days, after pressing the wine, which aged in 350-litre barrels and 228-litre barrels for the Ervedosa wine.
The malolactic fermentation took place in barrels, in contact with the lees (until August) and its total aging was 18 months.
This is a wine with complex aromas, with notes of fresh fruit, forest berries and pine needles, and a slight hint of smoke.
In the mouth it is intense and fresh, with great depth, with a very present acidity, showing a solid structure with present, lively and balanced tannins. The finish is long and persistent. We believe that it has great ageing potential. In the aroma and on the taste, the wine gains dimension with the presence of air, so decanting is recommended.
It goes well with dishes made with reductions and jus made from the meat itself, dishes with truffles and mushrooms, lamb and goat meat or grilled meat.
