Emilio Lustau Vermut Blanco, Jerez (Spain)
Some vermouths are built around neutrality—a base wine simply carrying botanicals. Others begin with something far more expressive at their core. Lustau’s Vermut Blanco belongs firmly to that second category.
Produced by Bodegas Emilio Lustau in Jerez, this vermouth is rooted in sherry rather than a neutral wine base. It’s crafted from a blend of dry, mineral Fino sherry and sweet, floral Moscatel, creating a foundation that is already layered before the botanicals are even introduced.
From there, a selection of nine botanicals—including wormwood, chamomile, gentian, rosemary, and citrus peel—are individually macerated and then blended into the wine, adding both aromatic lift and structure.
In the glass, the wine opens with floral, citrus, and herbal aromatics, underpinned by a subtle almond and mineral note from the Fino base. There’s an immediate sense of brightness, but also a quiet depth that continues to unfold.
On the palate, it strikes a distinctive balance—sweetness from the Moscatel meets a clean, bitter edge from the botanicals, creating a profile that is both refreshing and complex. Notes of orange peel, hazelnut, and spice move through a lightly textured, gently bitter finish that lingers without heaviness.
What defines this vermouth is its sense of place. It doesn’t just taste like botanicals layered over wine—it tastes like Jerez, with all the nuance that sherry brings.
A vermouth that moves easily between aperitif and cocktail, but is perhaps best appreciated simply—chilled, with a twist or olive—where its balance and detail can fully show.
