The 2020 Domaine Denis Mortet Gevrey-Chambertin "Mes Cinq Terroirs" is a distinguished red Burgundy crafted entirely from Pinot Noir. This cuvée is sourced from five premier parcels in the northern section of Gevrey-Chambertin, near Brochon: En Motrot, Au Vellé, Combe du Dessus, En Champs, and En Derée. The vines average over 60 years in age, contributing to the wine's depth and complexity.
Fermentation: Utilizes indigenous yeasts with a portion of whole-cluster inclusion (approximately 30–40%).
Aging: Matured for 18 months in oak barrels, with about 25–35% new oak, and bottled unfined and unfiltered to preserve purity .
Pairing: This wine is characterized by its savory and classic red Burgundy profile, offering a balance of fruitiness and structure. It pairs excellently with dishes such as duck, goose, and game birds .
