Charles le Bel is the second label of Billecart Salmon. Billecart Salmon uses only top-tier fruit from its estate and long-standing vineyard partnerships, and they used to sell the grapes they weren't using to other wineries. But over the past few years, they've realized that keeping these grapes "in the family", so to speak, ensures the quality of young vines for years to come and allows the estate a larger cache of reserve wines to draw from to craft both Billecart and Charles le Bel. So this is 'young vine' fruit, but over 70% of the blend is reserve wine (as in older vintage), adding depth and complexity to the final cuvee. It's almost an equal blend of the main Champagne grapes and the flavor profile is everything we want in a Champagne: Lemon zest, roasted almond, brioche, and a crisp tang on the finish that lifts the palate. Rich, golden apple and yellow pear fruit, plush and full of hazelnut and citrus, this is a great wine for both pairing, on its own, or for a toast!
