Silky, velvety, dark fruits aromas and the right amount of spices. No doubt, it’s a Cab! The 2021 Estate Cabernet Sauvignon quickly offers its aromatic complexity. The nose shines with brilliance, floral notes dominate combining peony, lilac and violet. Ripe plums and garrigue extend to a creamy mid palate.The racy structure carries through to an interminable, crisp finish that retains its freshness.
2021’s mild weather displayed a moderate, but consistent growing season similar to 2018. Winter was poor in rain and the drip irrigation took the relay quickly. Spring was cooler than normal with bud break delayed by two weeks. A warm summer promoted a good véraison onset but late summer and early fall slowed down the sugar uptake in the berries. The harvest was delayed by one week, slightly lagging behind the historical average. We observed lower potential alcohol levels coupled with higher acidity compared to the years 2018, 2019, and 2020. Despite this, the overall exceptional fruit maturity resulted in the production of high-quality wines, making this vintage a promising candidate for aging. Harvest started September 1st and finished on October 28th.
