Grower Champagne from the Vallée de la Marne, crafted by Antoine Bouvet, grandson of Guy Bouvet. He works organically and biodynamically on about 5 ha, producing small-batch wines. Roughly 82–84% vin blanc base (mostly Pinot Noir + some Chardonnay) with 16–18% red wine added via saignée (bleeding method) to impart rosé color and flavor.
Aromas of wild strawberries, tart raspberries, brioche crust, and brown sugar. Dry yet rich and persistent, with red fruit base (wild strawberry, raspberry), marzipan nuance, and custard-like creaminess on the finish.
